Let's Bake! Chocolate Chip Banana Muffins (Plus FREE Smashbox Palette + Primer at Sephora)
I love this recipe for Chocolate Chip Banana Muffins. I actually got the recipe from a 2nd grader! My little brother's class did a "cooking segment" once a week during the school year and at the end, kids brought in their own recipes. This is so, so delicious and perfect if you have to grab a quick, tasty, not super healthy breakfast during busy mornings. I love them best when they're fresh out of the oven since the chocolate has just melted. Let's get started!
1 3/4 cups All Purpose Flour
3/4 cup Sugar
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1/2 cup Vegetable Oil (a little less than 1/2cup)
1 cup Plain Yogurt (a little more than 1 cup)
1 tsp Vanilla Extract
1 cup Mashed Ripe Bananas (about 2 bananas)
3/4 cup Semi Sweet Chocolate Chips
Preheat oven to 350 degrees.
In a large bowl, combine all the "dry" ingredients –flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine all "wet" ingredients –egg, oil, yogurt, vanilla extract, and mashed bananas.
Stir mixed wet ingredients into mixed dry ingredients bowl, just until moistened.
Using baking trays, fill greased or paper lined muffin cups about 2/3 full.
Bake for about 20 minutes. (For mini muffins, bake about 20 minutes. For "regular" sized muffins, bake about 22-23 minutes.)
I use 2 containers of this 6 oz plain yogurt. It adds up to a little more than 1 cup.
I use these Nestle semi-sweet chocolate chips.
